Clean Smoked Chicken

Ingredients

  • NatureRaised Farms® Fresh Poultry Whole Birds
  • Kitchen twine
  • 1 lemon
  • 5 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 5 sprigs fresh oregano

Herb & Garlic Compound Butter

  • 1 stick (8 Tbs) unsalted butter, room temperature
  • 1 Tbsp minced garlic
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 3 tsp fresh oregano
  • 2 tsp fresh thyme
  • 1 tsp fresh rosemary

Instructions

  1. Combine butter, garlic, salt, pepper, oregano, thyme, and rosemary in a food processor and pulse until smooth. Slip your hand between the meat and skin on the breast and thigh sections to loosen. Spread compound butter between skin and meat, refrigerate overnight.
  2. Soak wood chips in water for a minimum of 20-30 minutes. Using the smoking method of your choice, start by draining the wood chips from the water. Place the wood chips into your smoker and heat to 300-350˚F.
  3. Slice the lemon into wheels and place 2-3 onto the skin with the fresh herb sprigs. Simply cross the legs and tie them together with kitchen twine and then once over the herbs to hold in place. Lift the wing tips up and tuck them under the bird. Place chicken into the hot smoker and cook for 2 hours or until temperature reaches 180˚F. Once cooked, discard the twine.
